Apple Crumble Pie

Ingredients

  • 5 cups peeled and thinly sliced apples
  • 2 tablespoons sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons ground cinnamon, divided
  • 1 ready-made piecrust (9″ diameter)
  • 1/2 cup old-fashioned rolled oats, ground in a blender or food processor
  • 2 tablespoons whole grain pastry flour
  • 1/4 cup packed brown sugar
  • 2 tablespoons trans-free margarine, melted

Directions

Preheat the oven to 350°F.

Combine the apples, sugar, all-purpose flour, and 1 teaspoon cinnamon in a large bowl. Place in the crust.

Combine the oats, pastry flour, brown sugar, and remaining 1 teaspoon cinnamon in a medium bowl. Add the margarine and stir until crumbs form. If needed, add some warm water to help crumbs adhere. Sprinkle evenly over the apples.

Bake for 30 to 35 minutes or until the filling is bubbling and the topping is browned.
Recipe Notes

For the healthiest version of this recipe, opt for a frozen whole wheat crust and thaw as the package directs before using. Available at health food stores or in the natural food section of your market, these crusts have more fiber than traditional ones and are usually prepared with nonhydrogenated oil–an added benefit for weight loss.

Chicken, Sweet Potato, and Apple Skillet


Ingredients
1 lb. boneless, skinless chicken breasts, cut into 1/2″ cubes
4 tsp. olive oil
3
slices 30% less fat centercut bacon (we used Oscar Mayer), chopped

1 1/2 C
Brussels sprouts, trimmed and quartered

1 med
sweet potato (8 oz.), peeled and cut into 1/2″ cubes

1 med
onion, chopped

Golden Delicious apples, peeled, cored, and cut into 3/4″ cubes

4
cloves garlic, sliced

1 tap
chopped fresh thyme or 1/4 tsp. dried

1/4 tsp.
ground cinnamon

1 C
reduced-sodium chicken broth

1/8 tsp.
salt

Directions
1.

Season chicken lightly with salt. Heat 2 teaspoons of the oil in large nonstick frying pan or cast-iron skillet over medium-high heat. Add chicken and cook until lightly browned and cooked through, about 5 minutes. Transfer to plate.

Return pan to heat and add remaining 2 teaspoons oil. Stir in bacon and cook until starting to brown, about 2 minutes. Add Brussels sprouts, sweet potato, and onion. Cook, stirring occasionally, until crisp-tender, about 5 minutes. Stir in apples, garlic, thyme, and cinnamon. Cook 3 minutes. Pour in 1/2 cup of the broth, bring to a boil, and cook until evaporated, about 2 minutes. add reserved chicken and remaining 1/2 cup broth. Season with the salt and black pepper as needed. Cook until hot, about 2 minutes.

Spiced Turnips and Apples

Turnips, though pungent, definitely have their sweet side, which comes out in this gently spiced sauté.
Ingredients
2 tablespoons butter

 2  tablespoon vegetable oil

1/2 teaspoon black or yellow mustard seeds

1/2 teaspoon cinnamon

1/4 teaspoon pepper

3 medium white turnips, peeled and diced

1/2 teaspoon salt

2 apples, peeled and diced

Directions
1.

In a large skillet, heat the butter, oil, mustard seeds, cinnamon, and pepper over medium-low heat. Add the turnips, sprinkle with the salt, and toss to coat. Increase the heat to medium and cook, stirring, until the turnips take on some color.

Add the apples and cook for 2 minutes. Cover and steam for 5 minutes. Uncover and cook until the turnips are tender, 3 to 5 minutes.

Tasty Apple Dessert

Ingredients
1 apple, peeled and sliced
1/2 teaspoon brown sugar

1/4 teaspoon ground cinnamon

1 teaspoon butter substitute

Directions
1.  Place the apple slices in a microwaveable dessert dish. Sprinkle with the brown sugar, cinnamon, and butter substitute. Cover with plastic wrap and microwave for 3 minutes, or until the apples are tender and the butter is melted.

3 Recipes: Braised Brussels Sprouts , Diabetic Pumpkin Pie, Black Bean Soup

Braised Brussels Sprouts

8 Servings

Ingredients
2 lbs fresh brussels sprouts
2 bacon strips, diced
1 medium
onion, chopped
1 cup chicken broth
1 teaspoon caraway seeds
1/4 teaspoon salt
1/8 teaspoon pepper

Directions
Trim brussels sprouts and cut an X in the core of each. Place 1/2 in. of water in a large saucepan; add sprouts. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender.
Meanwhile, in a large skillet cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain.
In the drippings, saute onion until tender. Stir in the broth, caraway seeds, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until liquid is almost evaporated.
Drain brussels sprouts. Add sprouts and bacon to onion mixture; toss to coat.

1 cup equals 91 calories, 4 g fat (1 g saturated fat), 4 mg cholesterol, 260 mg sodium, 12 g carbohydrate, 5 g fiber, 5 g protein.

Diabetic Pumpkin Pie
1 sm. pkg. sugar-free vanilla pudding
1 1/2 C. milk (whole or nonfat)
1 C. canned pumpkin
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Artificial sweetener to equal 1 tsp. sugar
1 baked 8-inch pie crust

Instructions
Place pudding mix in a saucepan. Gradually add milk. Cook and stir over medium heat until mixture comes to a boil. Remove from heat and add pumpkin, spices and sweetener; mix well. Pour into baked crust. Chill until firm, about 3 hours.

Diabetic Black Bean Soup
1 slice Bacon
1/2 cup Onion chopped
1 cup Celery
2 1/2 cup Black beans cooked, drained  ( I rinse all of my can food under running water once.)
2 1/2 cup Water
1/2 tsp Cumin
1/2 tsp Salt
1/2 tsp. ground pepper freshly
Directions
Fry bacon over medium heat in small heavy frying pan; crumble bacon and set aside. Heat bacon drippings over medium heat; saute onion and celery until tender, stirring occasionally. Puree beans in blender or food processor fitted with steel blade stir into vegetables.*Note: No food blender or processor, get a cutting board chop up beans very fine and stir into the soup.
Mix in crumbled bacon and remaining ingredients, stirring occasionally until soup is hot. Soup will thicken as it stands and can be thinned with additional water. Serve hot.  Low-sodium diets: Omit salt.

3 Apple Recipes: Apple Dumplings, Pancakes, & Chips

Country Apple Dumplings Recipe
RECIPE ONE: Country Apple Dumplings

Original recipe makes 16 dumplings
Ingredients

2 large Granny Smith apples, peeled and cored

2 (10 ounce) cans refrigerated crescent roll dough

1 cup butter

1 1/2 cups white sugar

1 teaspoon ground cinnamon

1 (12 fluid ounce) can or bottle Mountain Dew ™

Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.

Cut each apple into 8 wedges and set aside. Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end. Pinch to seal and place in the baking dish.

Melt butter in a small saucepan and stir in the sugar and cinnamon. Pour over the apple dumplings. Pour Mountain Dew™ over the dumplings.

Bake for 35 to 45 minutes or until golden brown.

RECIPE TWO  Apple Pancakes

Ingredients

Original recipe makes 2 servings

3 tablespoons butter

1 large apple, cored and sliced

1/2 cup white sugar, divided

2 teaspoons ground cinnamon

4 eggs

1/3 cup milk

1/3 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon vanilla extract

1 pinch salt

Directions

Preheat oven to 400 degrees F (200 degrees C).

Melt butter in an oven-safe skillet over medium heat; cook and stir apple slices, about 1/4 cup sugar, and cinnamon in butter until apples are tender, about 5 minutes.

Beat eggs, milk, flour, remaining 1/4 cup sugar, baking powder, vanilla extract, and salt in a large bowl until batter is smooth; pour batter evenly over apples.

Bake in the preheated oven until golden brown, about 10 minutes.
Run a spatula around the edges of the pancake to loosen. Invert skillet over a large plate to serve.

RECIPE THREE:  Apple Chips

Original recipe makes 6 servings

Ingredients

2 Golden Delicious apples, cored and thinly sliced

1 1/2 teaspoons white sugar

1/2 teaspoon ground cinnamon

Directions

Preheat oven to 225 degrees F (110 degrees C).

Arrange apples slices on a metal baking sheet.

Mix sugar and cinnamon together in a bowl; sprinkle over apple slices.

Bake in the preheated until apples are dried and edges curl up, 45 minutes to 1 hour. Transfer apple chips, using a metal spatula, to a wire rack until cooled and crispy.

Tuna Recipes: Apple Tuna Pasta Casserole & Tuna Mushroom Casserole

Apple Tuna Pasta Casserole
Ingredients

2   cup Macaroni
6   tbsp Butter or margarine
1/4   cup All-purpose flour
3   cup Milk
2   cup Processed american cheese
2   cup  Tuna  in water — drained
2   cup Tart apples,  core/dice such as Granny Smit
2    tbsp.. Butter or margarine — Melted
1/2   cup Bread crumbs — soft

Directions

Cook macaroni according to package directions; drain.
In saucepan, melt 6 tb butter or margarine over low heat.
Blend in flour and 3/4 ts salt. Add milk all at once. Cook quickly, stirring constantly, until mixture thickens and bubbles.
Add cheese; stir until cheese is melted.
Stir in tuna, diced apples and drained macaroni; turn into 12x7x2 inch baking dish.
Combine melted butter and crumbs. Sprinkle on top of casserole.
Bake in 350F oven for 30 minutes, or until apples are tender.Second recipe
Tuna Mushroom Casserole
Ingredients

1/2   cup -water
1   teaspoon  Chicken  bouillon   granules
1   package  green beans 10oz, frozen
1   cup onion,chopped
1   cup  mushrooms, fresh, sliced
1/4   cup  celery, chopped
1    garlic  clove, minced
1/2   tsp. dill
1/2   tsp. Salt
1/8   tsp. Pepper
4   tsp. Corn starch
1 1/2   cup Milk
1/2   cup  Swiss cheese shredded
1/4   cup  mayonnaise
2 1/2   cup noodles  med. cooked, drained  Egg noodles work will for this recipe.
1   can  Tuna (12-1/4oz)
1/3   cup Bread crumbs, dry
1   tbsp./ ButterDirections
In a large  saucepan  bring water and bouillon to a boil, stirring to dissolve. Add the next eight ingredients; return to a boil. Reduce heat; cover and simmer for 5 minutes or until vegetables are tender.
Dissolve corn starch in milk; add to the vegetable mixture, stirring constantly. Bring to a boil; boil 2 minutes or until thickened.
Remove from the heat; stir in Swiss cheese and mayonnaise until cheese is melted. Fold in noodles and flaked tuna.
Pour into a greased 2-1/2 quart baking dish. Brown bread crumbs in butter.
