Recipe: Crunchy-Herbed Chicken Breasts

Crunchy-Herbed Chicken Breasts
TOTAL TIME: Prep: 15 min. Bake: 25 min.


Olive oil-flavored cooking spray
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
1/2 cup grated Romano cheese
1/2 cup grated Parmesan cheese
2/3 cup panko (Japanese) bread crumbs
2 teaspoons minced fresh parsley
2 garlic cloves, minced
1/2 cup all-purpose flour
1/2 teaspoon pepper
1/2 teaspoon salt
6 boneless skinless chicken breast halves
2 eggs, lightly beaten
1/2 cup all-purpose flour


  • In a shallow bowl, mix the first nine ingredients. Place flour and eggs in separate shallow bowls.
    Dip both sides of chicken in the flour, eggs, then crumb mixture, patting to help coating adhere.
  • Place on a greased baking sheet. Spritz tops with cooking spray.
    Bake at 375° for 25-30 minutes or until a thermometer reads 170°.
    Yield: 6 servings.
