Two-Bean Vegetable Chili
Stir-together meatless chili made quickly with beans, tomatoes, corn and bell peppers

Prep Time 30(MINUTES)
Ingredients•1 can (16 oz. each) beans in chili seasoned sauce
•1 can (15 oz.) cannellini beans, drained, rinsed
•1 can (14.5 oz.) Hunt’s® Diced Tomatoes with Sweet Onion, undrained
•1 can (11.5 oz.) low sodium tomato-vegetable juice
•1-1/2 cups frozen whole kernel corn
•1 cup frozen bell pepper strips, chopped
•2 teaspoons chili powder
Directions:
Stir together all ingredients in large saucepan. Bring to a boil over high heat. Reduce heat to medium-low, cover and simmer 15 minutes, stirring occasionally. –

Recipe: Wild West Chili

Wild West Chili
Easy-to-make chili featuring lean ground beef, beans and spicy tomatoes
20 Prep Time (MINUTES) 25 Total Time (MINUTES) 5 Servings
Ingredients
1 pound ground sirloin beef (90% lean)
1 large onion, chopped (1 large = about 1 cup)
1 clove garlic, minced
1 can (15 oz each) Ranch Style® Beans, undrained
2 cans (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 teaspoon Gebhardt® Chili Powder Ground black pepper, optional

Directions
1. Cook beef with onion and garlic in large skillet over medium-high heat about 7 minutes or until beef is crumbled and no longer pink; drain.
2. Add beans, undrained tomatoes and chili powder; mix well. Bring to a boil; reduce heat to low.
Simmer 10 minutes, stirring occasionally. Season to taste with pepper, if desired.

Recipes: Two Versions Of The Winter Fruit Salad

Hello Everyone,
I love a fruity winter fruit salad so I have found a couple of my favorite recipes for you.
I like to add marshmallows in mine and walnuts. The options for a fruit salad are limitless so go crazy and enjoy.

Winter Fruit Salad
Ingredients

2 c. fresh pineapple chunks
2 firm bananas, peeled, sliced
1 c. seedless grapes
1 c. sliced oranges
1 c. pitted dates
1 c. salad greens
Creamy Date Dressing 
1 c. vanilla yogurt
Zest and juice from 1 orange (1/2 c.)
6 pitted dates
1 tsp. curry powder (optional)

Directions
Combine pineapple, bananas, grapes, oranges and dates. Arrange fruit on individual lettuce-lined plates.
For dressing, combine yogurt, 1 teaspoon orange zest, 1/2 cup orange juice, dates and curry powder in blender.

Whip until smooth, about 30 seconds. Serve salad with dressing. Serves 6.

Winter Fruit Salad
Ingredients

3 cups unpeeled red delicious apples, diced
1 1/2 cups sliced celery
1 cup seedless green grapes, halved
1/2 cup dark raisins

Dressing recipe:
1/4 cup non fat mayonnaise
1/4 cup nonfat sour cream
Directions
1. Combine all of the ingredients in a medium sized bowl.
Pour dressing over the mixture and refrigerate for 1 to 3 hours prior to serving.
