Breakfast for Supper Recipe: Banana Granola Pancakes

Banana Granola Pancakes
Yields 16 pancakes
1 1/2   cups whole wheat pastry flour
1   tablespoon sugar
1   teaspoon baking soda
1 3/4   cups low fat, or non fat milk buttermilk
2   egg whites, lightly beaten
2   cups sliced banana medium size
1/2   cup low fat granola cereal

1. Combine flour, sugar, and baking soda in a medium sized bowl mixing well.
Stir in the egg whites and buttermilk. Fold in the granola and bananas.
2. Coat a non stick skillet with cooking spray and preheat to medium heat.
3. For each pancake pour 1/4 cup of batter onto the griddle, and spread into a 4 inch circle.
Cook for 1 minute or until the edges are dry and the top is bubbly. Turn and cook for an additional 1 minute.
As the pancakes are done transfer them to a plate and keep warm in a preheated oven.
Add maple syrup and powder sugar as toppings. Or fresh fruit which ever should be your preference.
